ITINERARY

DAY ONE: Arrive in Copenhagen, one of the best cities in the world in which to live, and settle into one of our fave hotels - your home for the next couple of days. Take some time to relax, grab a nap if that’s part of your jet-lag strategy, and get ready to head out for dinner tonight with one of the city’s best known female chefs.

DAY TWO: It’s time to get to know the city, including must-see highlights and a few hidden gems, all through the eyes of your female guide. Bring good shoes but don’t worry, there will be a coffee and Danish pastry stop along the way - a must when in Denmark. After a delish traditional lunch, it’s time to dive into the universe of scientific ice cream, created by a real life female ice cream scientist with a Canadian connection.

DAY THREE: You can have the hotel’s incredible Nordic buffet breakfast this morning but leave some room! Today experience Copenhagen’s mouth-watering and innovating food scene on a 4 hour walking tour - so bring your runners and an appetite! With our amazing female guide (and owner of the company), learn about the city’s foodie history, culture and stop at all the best places. After the tour, have a snooze as our women-owned transportation company whisks us to the island of Funen, known as the birthplace of Hans Christian Andersen but also for its stunning archipelago and scenery. We can’t wait to introduce you to the brilliant owner of Hotel Faaborg, and share stories with her over an evening drink.

DAY FOUR: After breakfast, spend some time this morning strolling the old streets of Faaborg or take a dip in the outdoor spa at the oceanside. This afternoon, head to the island of Langeland and an organic estate which was bequeathed to Denmark’s Nature Foundation by its last and only heir, Ms. Ellen. After lunch and a tour of the estate and its ecological surroundings, hike to the nearby coast to forage for dinner under the expert guidance of a female wild food ranger. Yes, you read that correctly. Here we will challenge our tastebuds and understand how Nordic cuisine has gained international recognition through its focus on local resources.

DAY FIVE: This morning, take an early morning ferry trip to one of the gems in the South Funen Archipelago, the largest submerged Ice Age landscape in the world. An idyllic island in a class by itself, Aero Island has a history traced back thousands of years. Here, dive into the island’s wellness and arts scene, and leave lots of time to explore one of Denmark’s best-preserved 18-century towns.

DAY SIX: Spend the morning with a dynamic mother-daughter duo who launched a company together producing fruit wine based on an old family recipe from their grandmother. They will share their stories with us and we will taste their wine produced from black currants and gooseberries. Grab a bottle and explore their beautiful little shop while there! In the afternoon, stop in to a private home in the countryside to make and share lunch with a Danish expert in the field of gender, diversity and equality to exchange stories across countries and cultures. Tonight, head back to Copenhagen to soak in a few more of its impossibly cool vibes before the trip winds up.

DAY SEVEN: Most breweries are owned and run by men but, historically, it is Danish women who were involved in brewing. Today, meet one of the women disrupting the beer industry as a founding member of a worker-owned cooperative microbrewery in a historic building on the outskirts of Copenhagen. This afternoon is yours to decide - take a canal tour, pop into any number of the city’s celebrated bakeries or let Denmark’s cutting edge Design Museum seep into your senses. Tonight is a final dinner by another of the city’s top female chefs, as our culinary sendoff!

DAY EIGHT: Indulge in all the deliciousness of your last Nordic breakfast, because you have a travel day ahead. We hate to say goodbye but leave easy knowing that we are all much hipper for having spent a week among the Danes.

Women’s Organization

This trip supports: Danner

Danner is a feminist organization that has been providing safe spaces for women in need since 1875. Today, this Danish institution works to eliminate violence against women by empowerment, protection, prevention and advocacy. Their work includes providing shelter spaces for women and their children who are living in situations of domestic violence, as well as offering national counselling services and public awareness programs. Danner’s work was famously showcased in acclaimed Danish director Christina Roendahl’s 2017 documentary Violently in Love.

Danner also champions advocacy work against gender violence through national and international partnership projects, grounded in the belief that the most effective way to reduce violence against women is to strengthen civil society organization serving women in every country. They offer training and capacity building expertise to professional working with survivors of gender-based violence, including staff at civil society organizations, shelters, listening centres, health care, police, lawyers and state officials in Denmark, Greenland, Afghanistan and the Middle East and North Africa regions.
